  • 1 lb ground chicken or turkey
  • 4 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 2 tablespoons sesame oil
  • 1/2 cup chopped peanuts
  • 12 leaves of Boston lettuce
  • 3 tablespoons water
  • 1 tablespoon sambal oelek (chili paste)
  • 1 tablespoon honey
  • 1 tablespoon fresh ginger (I use a paste)
  • juice of 2 limes
  • 2 garlic cloves, minced
  • 4 green onions, minced
  • 1 tablespoon rice vinegar (optional – makes it more tangy)
  • 1 teaspoon cornstarch (optional – helps the sauce thicken)

Instructions

  1. In a mixing bowl, whisk together the soy sauce, oyster sauce, water, sambal oelek, honey, ginger, lime juice, minced garlic, green onions, rice vinegar (optional), and cornstarch (optional). Set aside.
  2. Combine ground chicken and chopped peanuts in another bowl; pour about three-quarters of the sauce over them. Mix well and marinate for at least 15 minutes.
  3. Soak rice noodles in warm water until softened; drain and cut into small pieces.
  4. Heat sesame oil in a skillet over medium heat; sauté marinated chicken mixture until fully cooked (about 10 minutes). Add soaked noodles and stir-fry for an additional 5 minutes.
  5. Assemble wraps by scooping the filling into lettuce leaves, topping with cilantro, green onions, peanuts, and drizzling with remaining sauce.
