  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot or Dutch oven over medium heat, heat the olive oil. Sauté the onion and bell peppers until softened (about 8–10 minutes).
  2. Add the thinly sliced sirloin steak and cook until browned.
  3. Pour in the beef broth and diced tomatoes; stir to combine.
  4. Season with Worcestershire sauce, thyme, red pepper flakes (if using), salt, and pepper. Simmer for at least 30 minutes.
  5. In a medium saucepan, melt butter over medium heat and whisk in flour to create a roux.
  6. Gradually whisk in milk until smooth; then add cream cheese followed by provolone cheese until melted.
