Ingredients

  • 2 cups granulated sugar
  • 3/4 cup water
  • 1/2 cup liquid glucose/light corn syrup
  • Few drops black gel food coloring
  • 6 Granny Smith apples (or 12 small apples)

Instructions

  1. Prepare your baking sheet by greasing a piece of baking paper and placing it on a tray.
  2. Insert bamboo skewers into the apples securely.
  3. In a medium saucepan, combine sugar, water, glucose, and black gel food coloring over medium heat. Stir gently until dissolved.
  4. Allow the mixture to simmer without stirring until it reaches hard crack stage (150ºC/310ºF), or test by dropping some into ice-cold water for hard threads.
  5. Dip each apple in the caramel mixture, swirling to coat evenly before placing on the prepared baking sheet.
  6. Let the dipped apples cool completely until hardened.
