  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine vegetable oil, sugar, and eggs until blended. Add pumpkin puree and vanilla extract; mix until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and ginger. Gradually add this mixture to the wet ingredients until just combined.
  4. Pour the batter into the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. While the cake cools, prepare the cream cheese frosting by beating softened cream cheese with sugar and vanilla extract until creamy.
  6. For the streusel topping, mix light brown sugar, white sugar, butter, flour, ground spices, and baking powder until crumbly.
  7. Once the cake is completely cooled, spread cream cheese frosting over it and sprinkle with streusel topping.
