  • 1 cup walnuts, finely chopped
  • 1 cup almond flour
  • 1/2 cup white sugar
  • 1/4 cup salted butter, melted
  • 6 oz pumpkin puree
  • 2/3 cup white sugar
  • 2 eggs
  • 2 8 oz cream cheese, room temperature
  • 1 tsp pumpkin spice
  • 1/2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/3 cup brown sugar
  • 1/4 cup oats
  • 1/2 cup flour
  • 6 T salted butter, softened
  • 1 tsp vanilla

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. For the walnut crust, mix chopped walnuts, almond flour, white sugar, and melted butter until combined. Press into the bottom of the prepared dish.
  3. In a separate bowl, beat room temperature cream cheese with white sugar until smooth. Add eggs one at a time.
  4. Pour 1½ cups of this mixture over the crust and smooth it out evenly.
  5. To the remaining mixture, add pumpkin puree and pumpkin spice; mix well.
  6. Layer this pumpkin cheesecake mixture on top of the plain cheesecake layer.
  7. Prepare the streusel by mixing brown sugar, white sugar, oats, flour, softened butter, and vanilla until crumbly; sprinkle on top.
  8. Bake for 60-70 minutes or until set in the center; cool before chilling in the fridge for at least two hours before cutting.
