- 1 cup walnuts, finely chopped
- 1 cup almond flour
- 1/2 cup white sugar
- 1/4 cup salted butter, melted
- 6 oz pumpkin puree
- 2/3 cup white sugar
- 2 eggs
- 2 8 oz cream cheese, room temperature
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1/3 cup white sugar
- 1/3 cup brown sugar
- 1/4 cup oats
- 1/2 cup flour
- 6 T salted butter, softened
- 1 tsp vanilla
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- For the walnut crust, mix chopped walnuts, almond flour, white sugar, and melted butter until combined. Press into the bottom of the prepared dish.
- In a separate bowl, beat room temperature cream cheese with white sugar until smooth. Add eggs one at a time.
- Pour 1½ cups of this mixture over the crust and smooth it out evenly.
- To the remaining mixture, add pumpkin puree and pumpkin spice; mix well.
- Layer this pumpkin cheesecake mixture on top of the plain cheesecake layer.
- Prepare the streusel by mixing brown sugar, white sugar, oats, flour, softened butter, and vanilla until crumbly; sprinkle on top.
- Bake for 60-70 minutes or until set in the center; cool before chilling in the fridge for at least two hours before cutting.
