  • 1 large egg
  • 1/3 cup light brown sugar
  • 1/4 cup oil
  • 1/2 teaspoon vanilla extract
  • 1/2 cup canned pumpkin
  • 1¼ cups powdered sugar
  • 3 tablespoons pure maple syrup
  • 1 tablespoon dark corn syrup
  • 1/2 tablespoon water
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini donut pan.
  2. In a bowl, whisk together all-purpose flour, oat flour, pumpkin pie spice, baking powder, baking soda, ground cinnamon, and salt.
  3. In another bowl, mix the egg, light brown sugar, oil, vanilla extract, and canned pumpkin until smooth.
  4. Combine wet and dry ingredients until just mixed; do not overmix.
  5. Fill the donut pan halfway with batter using a piping bag.
  6. Bake for 6-7 minutes or until donuts spring back when touched.
  7. Once cooled on a wire rack, dip each donut into prepared maple glaze.
