Ingredients

  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 big handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste
  • Optional: Chilli flakes and walnuts for garnish

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Peel and cube the butternut squash pumpkin into 2cm pieces. Place them in an oven-safe dish.
  3. Add garlic cloves (in skins), thyme leaves, and olive oil to the pumpkin. Season with salt and pepper and mix well.
  4. Nestle the block of feta cheese in the center of the dish. Drizzle additional olive oil over it.
  5. Roast for about 25 minutes until the pumpkin is tender and feta is softened.
  6. Cook pasta according to package instructions, reserving some pasta water before draining.
  7. Once roasted, remove garlic skins and mash cloves in the dish. Combine with the roasted pumpkin and feta until creamy.
  8. Stir in baby spinach and drained pasta, adding reserved pasta water as needed for a creamy consistency.
  9. Serve topped with optional chilli flakes and crumbled walnuts.
