Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.

- Form dough into balls (about 2 inches), roll in coarse sugar, and place on the baking sheet.
- In a separate bowl, whisk together the filling ingredients until smooth. Press down cookies slightly to create an indentation, then fill each with about 1 tablespoon of the pumpkin mixture.
