  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • ⅓ cup coarse sugar for rolling
  • 1 large egg (room temperature)
  • ¼ cup brown sugar
  • pinch table salt
  • ½ teaspoon pumpkin spice
  • ¼ cup whole milk
  • ½ cup pumpkin puree
  • ¼ teaspoon vanilla extract
  • whipped cream for serving (optional)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. In one bowl, mix flour, pumpkin spice, and salt. In another bowl, beat cream cheese and butter until creamy; gradually mix in sugars until fluffy.
  3. Add egg yolk and vanilla extract to the butter mixture; blend well. Slowly incorporate dry ingredients until just combined.
  4. Form dough into balls (about 2 inches), roll in coarse sugar, and place on the baking sheet.
  5. In a separate bowl, whisk together the filling ingredients until smooth. Press down cookies slightly to create an indentation, then fill each with about 1 tablespoon of the pumpkin mixture.
  6. Bake for approximately 15 minutes until edges are lightly golden. Let cool before serving.
