  • 140 grams brown sugar
  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk
  • 2 tablespoons maple syrup

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a springform pan (20-22 cm).
  2. In a mixing bowl, beat eggs and sugar until fluffy. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup; mix until combined.
  3. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold dry ingredients into the wet mixture until just combined.
  4. Pour batter into the prepared pan and bake for 25 minutes uncovered; then cover loosely with foil and bake for another 20 minutes or until a toothpick comes out clean.
  5. Allow the cake to cool before glazing.
