Ingredients
- 1/2 cup sugar
- 2 envelopes unflavored gelatin
- 4 cups white cranberry-peach juice drink
- 1 tablespoon lemon juice
- 2 cups fresh strawberries, halved
- 2 cups fresh blueberries
- 1/2 cup heavy whipping cream
- 1 tablespoon sugar (for cream)
- 1/4 teaspoon vanilla extract
- Fresh parsley (for garnish)
Instructions
- Prepare Gelatin: In a large saucepan, combine sugar and gelatin. Add 1 cup of cranberry-peach juice and heat over low until dissolved (about 5 minutes). Stir in lemon juice and remaining juice.
- Layer Strawberries: Place strawberries in an 8-cup ring mold sprayed with cooking spray. Pour in half of the gelatin mixture and refrigerate until set but not firm (about 30 minutes).
- Add Blueberries: Stir blueberries into the remaining gelatin mixture and carefully spoon over the strawberry layer. Refrigerate overnight to set completely.
- Serve: Unmold onto a serving platter and whip cream with sugar and vanilla until stiff peaks form. Serve slices with whipped cream.
