  • 1 1/22 lbs. top sirloin steak
  • 1 lb. baby red potatoes (cut into 1 1/2” chunks)
  • 2 bell peppers (cut into 1 1/2” chunks)
  • 2 small or 1 large zucchini (cut into 1/4-1/2” slices)
  • 1 large red onion (cut into 1 1/2” chunks)
  • 1/3 cup extra virgin olive oil
  • 1/3 cup reduced sodium soy sauce
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried dill weed
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon ground coriander
  • 1/21 teaspoon red pepper flakes
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a large bowl or freezer bag, whisk together all marinade ingredients. Reserve 1/3 cup for basting.
  2. Add steak to the marinade and coat well. Marinate in the refrigerator for 2–6 hours.
  3. Microwave baby red potatoes with water covered until fork-tender (about 4-5 minutes). Drain and toss with reserved marinade and other vegetables.
  4. Soak wooden skewers in water for at least 30 minutes before assembling.
  5. Thread marinated beef and vegetables onto skewers in desired order.
  6. Grill or bake kabobs on high heat for about 10 minutes until cooked through.
