  • 1 tablespoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 teaspoon unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup butter, melted
  • 1 serrano chile, minced
  • 2 tablespoons white onion, minced
  • 1 tablespoon fresh lime juice
  • pinch black pepper

Instructions

  1. In a small bowl, mix chili powder, ground cinnamon, brown sugar, cocoa powder, salt, and black pepper. Add olive oil and balsamic vinegar to create a paste.
  2. Coat the chicken pieces evenly with the spice mixture using a spoon or basting brush.
  3. Preheat your grill to medium heat. Grill the chicken for about 30 minutes until cooked through.
  4. For the lime butter, combine cilantro, melted butter, serrano chile, white onion, lime juice, and black pepper in another bowl and mix well.
