- ½ cup mayonnaise
- 2 tsp pickled jalapeño juice
- 1 tbsp sriracha
- Dash of cayenne pepper
- 1 tsp Dijon mustard
- 2–3 tbsp pickled jalapeños (chopped small)
- Paprika and chives for garnish
Instructions
- Hard-boil the eggs in a medium saucepan covered with cold water; bring to a boil, remove from heat, and let sit covered for 14 minutes. Transfer to ice water to cool.
- Peel the cooled eggs and slice them in half lengthwise. Scoop out yolks into a bowl.
- Mash yolks with mayonnaise, jalapeño juice, sriracha, cayenne, Dijon mustard, salt, and pepper until smooth. Fold in chopped jalapeños.
- Pipe or spoon the mixture back into egg whites and garnish with paprika and fresh chives.
