  • 10 mini pumpkins
  • 1 lb ground beef
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the mini pumpkins by rinsing, drying, cutting off the tops, and scooping out the seeds.
  3. In a skillet, heat 3 tbsp olive oil; sauté diced onion and minced garlic until fragrant (3-5 minutes).
  4. In a mixing bowl, combine ground beef, pumpkin puree, sautéed onion and garlic, salt, pepper, pumpkin pie spice, thyme, oregano, and sage. Mix well.
  5. Arrange hollowed mini pumpkins in a greased casserole dish; brush with olive oil and season with salt and pepper. Fill each pumpkin with the beef mixture and replace the tops.
  6. Roast in the preheated oven for about 30-35 minutes until tender.
