  • 1 batch 15-Minute Puff Pastry
  • 1 egg yolk
  • 1/3 cup cream cheese
  • 1 Tbsp fresh lime juice
  • 4 Tbsp fine turbinado sugar
  • Seasonal fruits: peaches, strawberries, raspberries, blackberries, blueberries
  • Mint leaves for garnish

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Roll out the puff pastry into a rectangle (10"x7") on parchment paper.
  3. Fold and press the edges to form a border, then brush with egg wash.
  4. Poke holes in the center and place dry beans to prevent puffing.
  5. Bake for about 20 minutes until golden brown; cool completely on a wire rack.
  6. Mix together cream cheese, lime juice, and turbinado sugar until smooth.
  7. Once cooled, spread the cream cheese mixture over the crust.
  8. Arrange sliced peaches and berries on top of the filling.
  9. Garnish with mint leaves before serving.
