  • 1 pound pizza dough
  • ¾ cup whole milk ricotta cheese
  • 1 ear fresh corn (kernels)
  • 1 fresno chili (sliced)
  • 1 cup grated low-moisture part-skim mozzarella cheese
  • Fresh basil leaves
  • Basil pesto
  • Smoked paprika

Instructions

  1. Prepare the dough by letting it rise or resting store-bought dough at room temperature for an hour.
  2. Preheat the oven to 500°F.
  3. Mix ricotta, lemon zest, sea salt, and black pepper in a bowl until blended.
  4. In another bowl, combine corn kernels, sliced fresno chili, olive oil, salt, and pepper.
  5. Par-bake the crust on a baking sheet or pizza stone for about 8 minutes.
  6. Spread the ricotta mixture over the crust and sprinkle with mozzarella.
  7. Top with the corn mixture and bake for an additional 10–12 minutes until golden brown.
  8. Drizzle with basil pesto, sprinkle smoked paprika, garnish with fresh basil leaves, slice, and serve hot.
