  • 2 Tbsp lemon zest
  • 2 large eggs
  • 1 1/4 cup all-purpose flour

  • 1/4 cup whole milk
  • 2 Tbsp lemon juice
  • 2 Tbsp sweet tea lemon juice
  • 1 batch Sweet Tea lemon juice Frosting
  • 1/2 cup (1 stick) unsalted butter (room temperature)
  • 3 1/2 cups confectioners' sugar
  • 1 Tbsp lemon zest
  • 34 Tbsp sweet tea lemon juice

Instructions

  1. Preheat oven to 350°F and line a cupcake tin with papers.
  2. In a mixing bowl, cream together unsalted butter, confectioners' sugar, and lemon zest until fluffy.
  3. Beat in eggs one at a time until well combined.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to the butter mixture alternately with milk and lemon juice until just combined.
  6. Fill cupcake liners 3/4 full with batter and bake for 16-20 minutes or until golden.
  7. Cool cupcakes before brushing with sweet tea lemon juice and frosting.
