  • 3 ears of corn (kernels removed)
  • 3 poblano peppers (thin strips)
  • 1/2 cup diced scallions
  • 5 eggs
  • 1 cup milk
  • 1/4 cup grated cotija cheese
  • 2 tablespoons all-purpose flour
  • Spices: dried oregano, ground coriander, nutmeg

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the pie crust by mixing flour, salt, and baking soda; cut in butter and add ice water until dough forms. Roll out and fit into pie dish.
  3. Sauté poblanos in vegetable oil until soft; add corn and scallions.
  4. Whisk eggs, milk, flour, spices, salt, and pepper in a bowl; stir in sautéed veggies and half the cotija cheese.
  5. Pour filling into crust; top with remaining cheese.
  6. Bake for about 45 minutes until set and golden. Let cool slightly before serving.
