Ingredients

Scale
  • 2 cups short grain sushi rice
  • 1 pound boneless skinless chicken breasts
  • ½ cup soy sauce
  • ¼ cup light brown sugar
  • 1 cup shelled edamame
  • 1 cup diced fresh pineapple

Instructions

  1. Rinse sushi rice under cold water until clear. Cook with 2 cups of water according to your rice cooker or saucepan instructions.
  2. In a mixing bowl, whisk together soy sauce, water, brown sugar, rice vinegar, grated garlic, grated ginger, toasted sesame oil, and cornstarch to make the teriyaki sauce.
  3. Heat olive oil in a skillet over medium heat. Season chicken breasts and cook for about 7 minutes on each side until golden brown and cooked through. Let rest before slicing.
  4. Fluff the cooked rice and divide it into serving bowls. Top with sliced chicken, edamame, pineapple, cucumber slices, carrot ribbons, and pickled red onions.
  5. Mix mayonnaise with lime juice and sriracha; drizzle this sauce over the bowls and garnish with green onions and sesame seeds.
