  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • ½ teaspoon sugar
  • 125g dried breadcrumbs
  • ½ teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. Heat olive oil and butter in a large pot over medium heat. Add chopped onion and sweet potato, cooking for 5–10 minutes until softened.
  2. Stir in minced garlic and ground cinnamon; cook for an additional minute until fragrant. Add fresh basil, chopped tomatoes, and chicken stock.
  3. Bring to a boil, then reduce heat to low and cover. Simmer for 20 minutes.
  4. In a mixing bowl, combine dumpling ingredients to form a stiff mixture; shape into 8 small balls.
  5. Blend the soup until smooth, adjusting seasoning with sugar, salt, pepper, and cream as desired.
  6. Drop dumplings into the simmering soup and cook for about 10 minutes without stirring.
