  • 3 tablespoons milk

  • 1 large whole egg plus 1 yolk
  • 1 1/2 pounds ground turkey
  • 1 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Olive oil or avocado oil, for brushing
  • 2 tablespoons ghee or unsalted butter
  • 1 tablespoon olive oil
  • 1/2 cup finely minced onion
  • 6 cloves garlic, pressed through garlic press
  • 2 teaspoons Italian seasoning
  • 2 cups organic pumpkin puree
  • 1 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 3/4 cups chicken stock
  • 1/2 cup grated parmesan cheese
  • 1/4 cup heavy cream
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh sage

Instructions

  1. In a large bowl, combine breadcrumbs with milk and let sit for 2–3 minutes.
  2. Mix in onion, garlic, sage, parsley, Italian seasoning, parmesan cheese, and egg until well combined.
  3. Add ground turkey, salt, and pepper; mix gently until just combined.
  4. Form into meatballs (2 tablespoons each) and freeze for 20–25 minutes.
  5. Heat oil in a skillet over medium-high heat. Sear meatballs until browned on all sides and cooked through (internal temperature of 165°F).
  6. For the sauce: Sauté minced onion in ghee and olive oil until softened; add garlic and Italian seasoning until fragrant.
  7. Stir in pumpkin puree, chicken stock, salt, pepper; simmer briefly then whisk in parmesan cheese and heavy cream.
  8. Combine cooked meatballs with sauce to warm through before serving.
