Ingredients

  • 1 ½ cups pumpkin puree
  • 1 cup granulated sugar
  • ½ cup melted coconut oil
  • 3 large eggs
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • Chai spice blend (cinnamon, ginger, cardamom, nutmeg, all-spice, cloves)
  • 8 tablespoons salted butter
  • Heavy cream
  • Dark brown sugar
  • Powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, mix chai spices. Reserve half for topping and mix the other half into the batter.
  3. In a mixing bowl, combine melted coconut oil, sugar, eggs, and pumpkin until smooth.
  4. Gradually add flour, baking powder, baking soda, salt, and reserved spices; mix until just combined.
  5. Fill cupcake liners evenly with batter and bake for 18-22 minutes or until set.
  6. While cooling, prepare frosting by melting butter with heavy cream and brown sugar over medium heat; cool before mixing in powdered sugar and remaining butter.
  7. Frost cooled cupcakes generously and sprinkle with reserved chai sugar.
