  • 3/4 cup granulated sugar
  • 2 large egg whites
  • ½ cup sour cream
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1 ¼ cup all-purpose flour
  • 1 tsp baking powder
  • Leaf green food coloring
  • 1 1/2 cups unsalted butter (for frosting)
  • Powdered sugar
  • Watermelon Kool-Aid mix
  • Mini chocolate chips

Instructions

  1. Preheat oven to 350°F and line a muffin pan with liners.
  2. In a mixing bowl, cream together butter and sugar until fluffy. Add egg whites, sour cream, milk, and vanilla; mix until combined.
  3. In another bowl, whisk flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  4. Mix in leaf green food coloring until desired shade is achieved. Fill muffin liners about halfway.
  5. Bake for 17–19 minutes or until a toothpick comes out clean. Let cool completely before frosting.
  6. For the frosting: Beat butter until smooth; gradually mix in powdered sugar and Kool-Aid for flavor. Adjust consistency as needed.
  7. Frost cooled cupcakes and top with mini chocolate chips.
