Ingredients
- 1/2 cup unsalted butter
- 3/4 cup granulated sugar
- 2 large egg whites
- ½ cup sour cream
- 1/4 cup milk
- 1 tsp vanilla extract
- 1 ¼ cup all-purpose flour
- 1 tsp baking powder
- Leaf green food coloring
- 1 1/2 cups unsalted butter (for frosting)
- Powdered sugar
- Watermelon Kool-Aid mix
- Mini chocolate chips
Instructions
- Preheat oven to 350°F and line a muffin pan with liners.
- In a mixing bowl, cream together butter and sugar until fluffy. Add egg whites, sour cream, milk, and vanilla; mix until combined.
- In another bowl, whisk flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Mix in leaf green food coloring until desired shade is achieved. Fill muffin liners about halfway.
- Bake for 17–19 minutes or until a toothpick comes out clean. Let cool completely before frosting.
- For the frosting: Beat butter until smooth; gradually mix in powdered sugar and Kool-Aid for flavor. Adjust consistency as needed.
- Frost cooled cupcakes and top with mini chocolate chips.
