Instructions

  1. Preheat your oven to 350°F and grease a 9×13 inch baking pan.
  2. In a large bowl, mix together the vegetable oil, sugar, and vanilla until well blended.
  3. In another bowl, combine flour, cocoa powder, baking soda, and salt.
  4. Gradually add the dry mixture to the wet ingredients until just combined.
  5. If needed, squeeze excess moisture from shredded zucchini and fold it into the batter.
  6. Spread batter into the prepared pan and bake for 25 to 30 minutes until springy to touch.
  7. For frosting: melt cocoa powder and butter together; blend with powdered sugar, milk, and vanilla until smooth.
