Instructions

  1. Squeeze excess moisture from grated zucchini using a cheesecloth or kitchen towel.
  2. In a mixing bowl, combine the dry zucchini with egg, Parmesan, cornstarch, salt, and pepper until a dough-like texture forms.
  3. Heat garlic butter in a non-stick skillet over medium heat.
  4. Form and place patties in the skillet; cook for 3–4 minutes per side until golden and crisp.
  5. Assemble by adding cheddar cheese between two patties and cooking for an additional 3 minutes until melted.
  6. Remove from skillet, let cool slightly, slice, and serve warm.
